Crunchy Tuna Salad

As a foodie, I am ALWAYS willing to try new things. Therefore, when I stumbled upon “pea shoots” at our local Trader Joe’s store a couple weeks ago, I was quick to buy. Let’s just say it was a purchase well made ;) as it turns out, they are INSANELY delicious and taste EXACTLY like a pea. BUT, that isn’t even the best news yet. Nope. I am happy to report that after some handy-dandy Google research, I quickly discovered that they are ALSO chalk full of vitamin A, C, and folic acid. In fact, pea shoots have seven times MORE vitamin C than blueberries. How awesome is that?! Anyway, I am currently trying to figure out multiple ways to incorporate these babies into some of my favorite recipes, starting with my Crunchy Tuna Salad. I actually stopped making this about a year ago, because, well, there is about null nutrients in iceberg lettuce. AND, since I’m attempting to eat healthier each and every day, it didn’t really contribute to the cause . . . until now.

Crunchy Tuna Salad

Ingredients:

1/3 cup organic mayo

1/3 cup organic sour cream

3/4 teaspoon garlic powder

1/2 teaspoon sea salt, ground

1/8 teaspoon pepper

8 ounces pea shoots

2 cans – 5 ounces tuna, drained and flaked

2 cups sharp cheddar, shredded

4 handfuls [yep, getting really technically over here] Fresh Gourmet Wonton Strips in Authentic flavor

Directions: In a small bowl, combine the mayo, sour cream, garlic powder, salt, and pepper. In a large bowl, combine pea shoots, tuna, and cheese. Add mayonnaise mixture. Toss to coat. Stir in wonton strips. Serve immediately.

This dish is healthy and light = the perfect summer salad [if I do say so myself] :) CHOW!
