I had a fantastic Fourth of July. I went to morning yoga, had Choice Smoothies with a girlfriend, laughed and ate excellent food at our friends’ house that night, AND even managed to watch some fireworks with D in our Jeep on the ride home. It was simply excellent. The next day, however, I felt like something was missing. I couldn’t put my finger quite on it . . . UNTIL yesterday afternoon = WE DIDN’T EAT S’MORES! When I realized this mess-up, I developed this [what can only be described as] crazy hankering for this ooey, gooey dessert. SO, I headed on over to my beloved Cream of the Crop grocery store in Oceanside to see if I could find some healthy ingredient alternatives. Why? Because, this year, I’ve been making more conscious effort to put better kinds of food into my body and didn’t want to muddle it up just because I was having a craving. ANYWAY, Cream of the Crop [of course] had all that I needed. Thus, here is how I made some vegan-y, no GMO’s, chocolaty delicious S’mores:
[DISCLAIMER: Now, if you’re lucky and have a fire going, these directions below aren’t for you ;) because, well, you have a fire.]
Directions: Preheat your oven to broil. Position four graham cracker squares evenly apart on a small heatproof pan. Next, cut the chocolate bar into four pieces and set one piece onto each graham cracker square. Once, the oven is ready, place the pan in the oven and observe closely. As soon as the chocolate starts to melt, slide the pan out and lightly plant two marshmallows in the middle of each chocolate piece. Return to oven. Depending on how you like your marshmallows, watch until the desired toasty-ness is reached. Then, remove from oven. Add an additional graham cracker square on top. Allow to cool and ENJOY!

This is SERIOUSLY the yummiest S’mores I have ever had in my life :) who knew vegan marshmallows could taste so good!?
