Jenna’s Tuna Melt

Okay, I finally decided it was time to share with you my Tuna Melt recipe. I’m not really sure why it took as long as it did . . . I mean I know once I perfected this bad boy for my D, I had sort of burned us both out on them. So, yea, I hadn’t made them in a while – you know giving us a MUCH needed break. BUT, then on Monday [which is our “Sunday”] when I was looking for something quick AND delish to make for lunch, I found myself staring right at all my favorite “Tuna Melt” ingredients. Therefore, as fate would have it, I whipped up a batch, got out my camera, and snapped a few pics. SO, here’s the recipe :) eat your heart out!

Jenna's Tuna Melt


2-5 ounce cans Trader Joe’s Albacore Solid White Tuna in Olive Oil, drained

1/2 cup mayonnaise with olive oil

1/4 cup red onion [I cheat to win and use Litehouse Freeze-Dried Red Onion – makes it über easy!]

1/4 cup dried oregano

1/2 teaspoon coarse salt

1/2 teaspoon ground pepper

juice of half a lemon

Trader Joe’s Cotswold Double Gloucester Cheese with Onion & Chives, sliced

4 slices “round loaf” sourdough bread

butter [for bread slices]

Directions: Preheat broiler with the rack in highest position. In a medium bowl, combine tuna, mayonnaise, onion, oregano, salt, pepper, and lemon juice. Stir thoroughly until it’s all combined and place it in the refrigerator. Arrange your bread slices on a baking sheet and spread a little butter on each side of each slice. Place baking sheet in the oven. Watch closely. Once one side is lightly toasted, take out of the oven, flip the slices over, and add cheese to two of the four slices. Replace in the oven and leave until the cheese is melted. Remove the tuna salad from the fridge and divide it evenly among the two slices of bread without cheese on them. Then top each with a cheese-covered slice, cut the sandwich in two, and VOILA! Your tuna melt of awesomeness is ready to devour!
