Shrimp Boil

As you can tell by my ramblings here on LLM, I think my D is a pretty swell guy. I never thought I would be the kind of gal who ever loved having her car door always opened for her OR like being called “baby” OR any of the other million adorable, gentlemen-y things he does for me . . . BUT I am! Anyway, during our first summer as #meandd, D completely won me over by making this Shrimp Boil for us. I’ve honestly never had sweet corn, potatoes, and shrimp taste so good! See, D lived in Louisiana for 5 years, and although, he’s not really a cook, he sure knows how to boil ;) so here’s D’s recipe:

Shrimp Boil


4 lemons, 2 halved & 2 cut into wedges for serving
1 cup Old Bay Seasoning
8 cloves garlic, smashed
1 large red onion, quartered
1/4 thyme
1 pound baby red potatoes, washed
4 ears corn, husked and snapped in half
1 1/4 pounds large shrimp, unpeeled
1 stick unsalted butter
hot sauce, for serving

Directions: Fill a large pot with 4 quarts of water. Squeeze lemon halves into the water and throw in the halves. Add Old Bay Seasoning, garlic, and onion. Pour in thyme. Cover and bring to a boil. Cook 5 minutes. Add potatoes and cook 10 minutes. Add the corn and cook 5 minutes. Add shrimp and cook until the shrimp curl and are just opaque; takes about 2-3 minutes. Remove from heat and drain the entire concoction in a colander. Melt butter. Transfer all the food onto a large platter and pour the butter over it. Serve with lemon wedges, hot sauce, and some more Old Bay Seasoning if your heart so desires :)
