Yesterday in celebration of the card companies’ cupid holiday, I baked D some of my Aunt Joyce’s Cake Mix Cookies.
They’re simple and the possibilities are endless ;)
1 cake mix box of your choosing [I went with Red Velvet.]
1/3 cup applesauce
Directions: Heat your oven to 375°F. Combine all your ingredients into a bowl. Mix for 5 minutes. While mixing, grease your cookie sheet.
I used two of Wilton products with this recipe: their Heart Shaped Whoopie Pie Pan and their amazing Cake Release. Squeeze a small amount of the Cake Release into each heart and with a silicone basting brush, spread it around the pan.
Next, dip a small spreader in some water.
Then take the small spreader and evenly distribute the batter within each heart.
Yep, we’re already there! Bake for 8 minutes or until the edges are lightly browned.
Remove from the oven and cool for 10 minutes; lift each cookie out of the pan and allow additional time on a cooling rack. Makes 18 heart cookies.
Now, these treats are pretty scrumptious by themselves . . . but you can also frost them. I would wait, though, until you’re ready to devour [just a little tip] as frosting will kill the life expectancy of your cookies. OH, and the extra awesome news about this recipe is you can also use this same concept with instant pudding; just use white cake mix, 3/4 applesauce, 1 egg, and a box of whatever instant pudding you like.
